Sour soup bass

Today I will share a simple and delicious home-cooked dish for everyone: Sour soup bass.

bass is a fish that we often eat in our daily life, It is very popular with everyone because of its tender meat and less fish bones. The nutritional value of bass is also high, rich in protein and trace elements, which is good for our body.

Generally, we will choose steamed bass, the original fish is both nutritious and tender and delicious; today I will share with you the sour soup bass, the tender fish, the sweet and sour fish soup, not only nutritious, but also appetizing, it is very suitable for the elderly and children.

Ingredients:

1: fish (one); 2: tomato (20 g); 3: broccoli (20 g); 4: red pepper (3 g); 5: green pepper (3 g);

6: bamboo shoot (15 g); 7: shallot (4 g); 8: ginger (2 g); 9: salt (5 g); 10: white pepper (1 g) ;

11: cooking wine (2 g); 12: potato starch (1 g); 13: garlic (3 g); 14: sugar (3 g); 15: white vinegar (1 g); 16: vegetable oil (15 g).

Step:

1: Cut the tomato and broccoli, then soak the broccoli in salt water for 5 minutes;

2: Cut the shallot, green peppers, red peppers and bamboo shoot, then soak the shallot and peppers in water for 5 minutes;

3: The bass cleans the scales and internal organs, and then breaks down with a knife (please refer to the video);

4: Then put the fish head, fish tail and ginger into the pot and steam for 5 minutes on high heat;

5: Separate the fish bones, fish steak and fish meat with a knife, then cut the fish into fish fillets, then wash them with water;

6: Next put the fish, salt, white pepper, cooking wine, egg white, potato starch juice and vegetable oil in the bowl, stir well, and marinate for 10 minutes;

7: Put a little salt and vegetable oil in the pot and boil, then add broccoli and bamboo shoot, and cook for 30 seconds, then remove;

8: Pour the vegetable oil into the pot and heat it to 40%, then add garlic, tomato and fish bones, stir fry for 1.5 minutes;

9: Then add cooking wine, water, salt and sugar in the pot, cook for 5 minutes on high heat, and then remove the fish bones and impurities;

10: Put the marinated fish in sour soup and cook for 5 minutes on medium heat;

11: Put the fish head, fish tail and vegetables in the dish, then pour the sour soup fish;

12: Finally put shallot and chilli on the fish, heat the vegetable oil and evenly pour it on top.

Precautions:

1: The scales and internal organs of the fish must be cleaned, otherwise it will affect the taste;

2: When using a knife to break down the fish, be sure to pay attention to safety;

3: Do not cook broccoli and bamboo shoot for a long time, about 30 seconds;

4: Be sure to pay attention to safety when pouring hot oil on fish meat;
