Harissa-and-Maple-Roasted Carrots

A colorful and spicy (but not fiery!) side breaks up all the heavy, rich dishes on the table.

Ingredients
Vegetarian, Gluten free
∙ Serves 8

Produce
2 Garlic cloves
1 Lemon
2 1/2 lbs Rainbow carrots, small

Condiments
1 tbsp Harissa paste
1/4 cup Maple syrup, pure

Baking & spices
1 Kosher salt and freshly ground black pepper
Oils & vinegars
1/4 cup Olive oil
Nuts & seeds
2 tsp Cumin seeds
