Beef Stew (Kaldereta)

Filipino Beef Stew or Kaldereta is a famous dish in Philippines. It is a tomato based stew dish, common on parties or fiestas in the Philippines. We commonly use goat meat, chicken or beef meat. savouring dish with sweet to tangy taste.

I come up with my own version of Kaldereta, I used beef meat, i deleted the liver spread or the liver pate as it is not available from where i live. (liver spread or liver pate serves to thicken the sauce and add flavors too, but it still tasty without it).

Cooking time: 40 minutes to 1 hr

Serves: 3-5 persons


INGREDIENTS

  • garlic and onion and bay leaf (2)
  • beef meat (1- 1 1/2 kilo) cut in chunks
  • tomato sauce (450 grms)
  • water (1 - 1 1/2 cup)
  • potato (quartered)
  • carrots (quartered)
  • peas
  • green bell pepper
  • peppercorn

PREPARATIONS

  • Saute garlic and onion in a medium heat pan

  • Add in the Beef, continue sauteing for few minutes till the meat color changes to brown

  • After saute, Add in the tomato sauce and water, (I used rice water for added taste)

  • let it boil for few minutes, then add Bay leaves and Peppercorns

  • once boiled, Simmer for 30 minutes or until the meat is tender

  • Add in the potatoes and carrots

  • once simmered and the meat is tender
  • add in green bell pepper and peas and cook for few more minutes
  • salt and pepper to taste

My Father cooks excellent Beef stew, wether it be chicken, beef or goat meat. he is a champion from this dish. everytime he cooks this stew, guaranteed, our rice pot is nice and clean.

I dedicate this recipe for my loving Father, (he loves kitchen more than my mother) ; - )

I miss them a lot, especially this coming christmas. Unfortunately i will not be able to go home, but we will call them in Christmas philippines time.
