Kitchen Witch Thursdays - Unconventional Cinnamon Rolls

So better late than never, right? XD

This is yet one more recipe from my grandmother. They're unconventional because....well, you'll see! She could never get them to cook right in the traditional style, so she developed her own method of doing them. I love them because I'm kind of the same, but what they lack in looking pretty they make up for in flavor!

You'll Need The Following;

  • 1 can pre-made pizza dough
  • 12 tablespoons room temperature butter, divided between 8 and 4 tablespoons
  • 1 cup brown sugar
  • 2 tablespoons cinnamon
  • 8 oz room temperature cream cheese
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Now sure, you can go ahead and make your own dough but if you've followed me for any length of time you know I like my shortcuts. This way there's no waiting for dough to rise or screwing up the yeast, you know?

Before you do anything else, preheat your oven to 375 degrees Fahrenheit.

Then roll out your dough and spread it with 8 tablespoons of butter. You can usually do it with your hands, but if that's too messy a spatula or something similar will be just fine as long as you don't rip the dough.

Mix together your 1 cup brown sugar and 2 tablespoons cinnamon and spread it all in there. There will be too much, but don't worry about it.

The next step is to roll your dough up from the long side until you get a nice long log. Then go ahead and cut off the edges and cut the remaining log into four pieces. Some of the filling will fall out and that's okay!

Once that's done, deconstruct each one into a log strip and roll it back up nice and tight, rolling it in the excess filling. You can even make two more out of the end pieces for a total of six of these. When my grandma made them at holidays the little ones were for the, well, little ones XD

Once they're rolled up go ahead and put them in your greased up pan and stick them in the oven for 20 minutes. There will still be excess sugar and cinnamon, but you'll want to keep that :)

While your rolls are baking, make the frosting. Start by mixing your 4 tablespoons room temp butter with your 2 cups powdered sugar.

Then go ahead and add in your 8 oz room temp cream cheese, 1 tsp vanilla and and the rest of the cinnamon and sugar mixture and go ahead and mix it all up until it's a nice consistency.

Once your rolls come out of the oven go ahead and spread the frosting over the top liberally and give it a few seconds to melt nice all over these babies.

Dig them out with a spatula and enjoy! These guys are really sugar heavy, but that's the best part about them in my opinion :)
