I don't know about you guys, but I absolutely love soup - and fall season being soup season makes me incredibly happy to whip out my crock pot again!
This soup is vegan, gluten free, and delicious.
makes four
2 c dried split peas
1 medium carrot
1 onion
1 bay leaf
1 T olive oil
1 clove garlic
salt & pepper to taste
6c water
- Chop up onion & carrot, place everything into slow cooker (peas first), finishing with the water.
- Place on high heat 5-6 hours, or low hear 8-10 hours.
So quick and easy, and it's by and large one of the tastiest soups I've ever had. If you want a pea soup with an even thicker consistency, add one medium potato!
