I actually ran into a picture on Pinterest that had colorful peppers full of veggies and spices but I wanted to add some meat so I did my own thing.
Ingredients:
- 1lbs ground turkey (or any meat you prefer)
- 15oz corn
- 15oz black beans
- 4oz mushrooms
- 6 peppers (cut in half)
- 1 box of quinoa blend
- taco seasoning
- salsa
Optional - Greek yogurt plain or sour cream
- hot sauce
Directions:
- In a medium sauce pan follow the directions on the box of quinoa.
- While the quinoa is cooking, Brown your ground turkey and drain when finished.
- Put meat back on stove, with a little water add taco seasoning and mix well.
- In a separate bowl I added all my veggies/salsa together and mixed.
- I also cut all my peppers in half
- When quinoa is done, I added it to the bowl of veggies. Mixed well then added the ground turkey.
- To make my peppers tender, I used my skillet and put water in it, laying some of the peppers in it and letting it steam them. Makes it were you don’t necessarily have to use the oven.
- After peppers were tender, I added the veggie/quinoa/meat mix. I topped mine with Greek yogurt and sriracha! You could also add cheese if you like.
