Tagliatelle of spelled with king prawns and Jalapeño - special personal recipe for Steemit

in food •  7 years ago  (edited)

Hi dear Steemians,

Fresh recipe of the day, cooked today for lunch. This morning I wake up and decide to go to the market of a nearby town, when I get to the fish counter I see these nice king prawns that were very inviting, so I decided to buy them to prepare this dish.

I recommend if you can use only fresh or freshly frozen ingredients. The ingredients we use are essential for the success of the dish.

Recipe for 3/4 people.

WHAT WE NEED:

500g king prawns
1pz jalapeño
250g tagliatelle of spelled
50g mix of carrot celery and onion
2/3 spoons of extra virgin olive oil
1 clove of garlic
salt to taste
3/4 spoons of tomato sauce
a bit of parsley

GET STARTED

Take a wok and pour the olive oil, add the carrot celery and onion mixture, now add the garlic (I grind it as if from the picture but if you want you can cut it into pieces or leave it whole and remove it before putting the prawns) and turn on the fire and fry for 2/3 minutes in a live fire.

While the oil frys, remove the shell and clean the prawns from the interiors that otherwise make it all bitter.

Once the vegetables are ready, add the jalapeno chili (that we must have previously cut and remove the seeds inside as in the image) and the king prawns. Wash your hands thoroughly after handling the chili or else if you touch your eyes are pains.

Cook for 2/3 minutes, then add a little bit of tomato sauce and continue to cook for another 5 min and your dish will be ready.

I do not add salt in the sauce because the prawns are already salted and there are all flavorful ingredients that don't need anymore.
Be careful not to cook too much crustaceans, otherwise it will become hard to chew.

Now there remains only the pasta to be cooked, while cooking the sauce, in a pot boil the water with a handful of big salt, when boiling add the tagliatelle. The cooking time depends on if you like cooked al dente or well cooked, I prefer al dente and I cook the pasta for 5 min.

Now there is nothing left to add the pasta to the sauce and sprinkle some parsley, the result should be this :)

WHY THE SPELLED PASTA?

The spelled is poor in gluten and unlike the classic wheat pasta is much richer than nutrients and easy to digest, it is also very good.

WHY THE JALAPEÑO?

I chose the Jalapeño which among other things I personally cultivate as an essential ingredient of this recipe, because it has a lot of vitamins, are very good for heart and circulation. Also it give an intense flavor with a sweet aftertaste that I find fantastic with the king prawns.

I hope you find this recipe interesting and if you try it let me know your results :)
