Life is full of contradiction, isn't it?! A few hours ago, I was talking about my love for Spam (the meat). Now, I am talking about healthy paleo muffins. I suppose one could call that a balanced life style or the so called Yin and Yang, or am I fooling myself?!
Anyhow, I have to say this muffins I made this afternoon is truly healthy - They are Double Chocolate Peanut Butter Coconut Flour Muffins.
They are basically very fluffy grain free, sugar free, paleo muffins and are incredibly delicious. Check out the ingredients:
1/4 cup creamy peanut butter
2 tablespoons coconut oil
1 tablespoon vanilla extract
2 eggs
1 cup unsweetened coconut milk
1/2 cup coconut flour
2 teaspoons baking powder
1/3 cup unsweetened dark cocoa powder
1/3 cup chocolate chips
Here are the steps:
- preheat oven to 350 and grease the muffin pan
- combine peanut butter, coconut oil and vanilla in a bowl
- add in eggs, milk and mix until batter is smooth
- combine coconut flour, baking powder and cocoa powder
- add wet ingredients to dry ingredients and mix well
- fold in chocolate chips and pour into muffin tin
- bake for 18-20 minutes
My husband approved this muffin and already had two. Checked out his empty plate, lol.

Your husband really left a whole lot of it in absence lol. Love your recipe, it is on point. Having a muffin along side a cup of coffee or warm milk is a winner. This a lovely recipe.
