Meatloaf That'll Make You Want to Smack Your Momma Just to Get Another Bite

OK, a slight exaggeration, but this recipe DID nearly lead to a duel between my son and husband-like-being over who I'd make it for more often.

Nah, that's not really them - but I could totally see this happening.

This is the only meatloaf I've ever really eaten - it's how my mom made it and how her mom made it before that. It's meatloaf. No biggie, right?

Except that apparently, it's FLUFFY-ish, which is not normal. It's long been a highly-requested favorite in our house, which is also not normal.

Oh, and it tastes so good that my kids renamed it MEAT-LOVE.

Side note: They, like me, didn't realize other meatloaf... stinks. So, they had a rude awakening when tasting other versions. (muahahaha)

So, here's the recipe:

Ingredients

  • 1 Egg (ours was laid by Attila the Hen, one of our flock)
  • 1 Pound Ground Beef
  • 1 Cup Italian Breadcrumbs
  • 1 Packet of Onion Soup Mix
  • 2 Tbsp. Yellow Mustard (to taste, though)
  • 4 Tbsp. Ketchup (again, to taste)
  • About 1/2 Cup of Milk (enough to make it all bind - you might need more or less)

Do This

  1. Preheat oven to 350 degrees (176 celsius).
  2. Line a rectangular glass baking dish with foil... unless you LIKE scrubbing.
  3. Admire the fine egg your hen laid (or, just grab one from the fridge).

  1. Put your hamburger meat into a big mixing bowl.

  2. Add the onion soup mix.

  3. Crack the egg into the bowl and add the breadcrumbs.

  4. Add the mustard and ketchup.

  5. Add the milk.

  6. Stir it up. You can use your hands if you prefer... always fun to chase the family around brandishing your meat-love hands. Don't judge.

  7. Plop the whole mess into your baking pan and shape it like you want. For Halloween, I usually make it look like a man :) Normally, I make it pretty flat because the edges are the BEST part.

  8. Bake for about 45 minutes. I like it browned a bit.

It's really good for leftovers, too - like on a sammich with mustard. Mmm Mmm Mmmmmmmm.

Yes definitely the onion soup mix. Also vegetable soup mix works too, but for some reason is harder to find :(

That would definitely work - as long as it's heavy on the onions. You're right, it's tough to find.

I can always go for some good meatloaf and serve it up with some mashed potato
