I posted before that I have really been working hard to overhaul my family's diet. One of the fruits that can provide the most fiber content are blackberries. The most recent batch that I bought were unsatisfactory to my picky kiddos, so I decided maybe the hubby and I deserved a little treat. It's not something I do often, but we have been good, so once in a while it's okay.
I am not a fan of cobbler or pie crust. I know, I'm weird. But it just doesn't taste like anything, and is often too dry. So I set out to try something a little new this time. Instead of a crust, I wanted to think more like a cookie dough. This cobbler turned out so good! Like, I better not make another one for a while good, ha! Here's how I did it...
Momma's Blackberry Cookie Cobbler
1 1/2 to 2 cups washed and patted dry blackberries (or any other fruit that sounds good to you)
1 egg
1 cup, plus a sprinkling sugar
3/4 cup flour
6 tbsp melted butter
Preheat oven to 350 degrees. Spray your baking dish with cooking spray (or spread some butter on the bottom.) Spread your berries evenly in the baking dish and then sprinkle lightly with sugar. You can skip this if you don't want the cobbler as sweet. In a small bowl, beat the egg, and then mix in the cup of sugar. Once that is mixed well, slowly stir in the flour. Spread the topping over the top of the berries. Don't be afraid to use your hands here, it's easier. Pour the melted butter over the top of the cobbler. Bake for 30 to 40 minutes until the cobbler is just starting to brown and bubbly. Serve with a bit of ice cream or cream and enjoy!
