Hello dear friends, these afternoons have been heavy rains here, which has led to spending evenings watching movies. And it provokes me these days to prepare chili con nachos, a very Mexican recipe that anyone can prepare, since it is very easy.
Here I share the recipe
Ingredients:
- 500 gr of black beans or beans
- 1/2 kg minced meat from shoulder or another that does not have much fat
- 200 gr of onions
- 5 cloves garlic
- 3 tomatoes
- 3 oil tablespoons
- 1 red pepper
- 1 l beef broth, or veal, serves those who sell already prepared
- 1 teaspoon cumin grain
- 1 teaspoon oregano
- 3 teaspoons of hot chili powder, in Spain it is difficult to get ground chili, which can be used instead whole or ground cayenne
- optional, a few drops of Tabasco
- Salt
- Pepper
- a pinch of sugar to remove the acidity of the tomato.
preparation:
First have the beans soaked for 12 hours before starting.
Wash and chop the tomatoes immediately before starting, trying to remove the skin if possible.
We began draining the beans, put them in a pan with cold water and salt to boil for about 5 minutes. Then we drain them again and boil again with cold water until boiling another 5 minutes and drain them away from the heat until we need them.
On the other hand, in another pot, heat the oil and fry the meat, adding the onion and garlic cloves. After 5 minutes add the chopped red pepper, the tomatoes and the beans, the oregano, the cumin, the tabasco pepper and the pepper.
We throw the beef broth. Cover and let cook a couple of hours more or less (depending on the type of bean we spend, go populate until we see that they are soft) After the first hour of cooking we take a little salt and continue cooking. And ready to serve.
