Raffaello cake is a simple cake to make, doesn't take much time and uses simple ingredients.
Every Christmas and Easter my mother makes this for us.
If you like Raffaello chocolates, then you shall for sure like this cake too!
Ingredients:
6 eggs
120 grams of sugar
6 tablespoons of sugar
200 grams of coconut shavings
2 tablespoons of flour
1/2 a bag of baking powder
1 small packet vanilla pudding (40 grams)
1/2 litre of milk
125 grams of margarine
STEP 1
separate 6 egg whites and mix the eggwhites with 120 grams of sugar
add 150 grams of coconut shavings and the two table spoons of flour and the 1/2 bag/pack of baking powder and then mix again.
Pour into a baking tray and bake at 180 degrees celsius for 30 minutes.
Step 2
The filling:
Take your 6 egg yolks add 6 tablespoons of sugar, 1 pack of vanilla pudding and cook into a pot with the 1/2 liter of milk, on a small flame. Make sure to stir every so often so that it doesn't burn.
Once it is cooked and nice and even, let it cool down, once it has cooled down add the margarine and mix again.
Step 3
Place the biscuit (base) onto a serving tray and pour this fill out onto it, nice and evenly.
Then sprinkle coconut shavings over it so that the entire top is covered with coconut.
Step 4
Place your cake into the fridge, let it solidify and then you can cut and serve.
Make sure to keep this cake in the fridge at all times.
My children like these and they are very rich in flavour.
We call this Raffaello Cake, or Raffaello sticks, maybe some other cooks call it differently, my mother got this recipe years ago from a friend.
