Edible Christmas Present Ideas

Hi Steemit,

Christmas is just around the corner, have you heard christmas carol at the shopping center and people had already started to buy Christmas Present?
In Philippines we have a very long christmas celebrations once the "ber" months starts, People already started to put up christmas decorations and you will hear christmas carols everywhere.
Christmas is my favourite time of the year, I always look forward for family gatherings. Once in a year I get to see our relative who lives in different places and overseas. Aside from the gifts that I will be getting from them, I also excited to hear their stories about how they spend the entire year. If they had been to a big shopping mall, or how beautiful the christmas lights in the city. I would always dream that one day I will be able to see it as well. My family lives in a small village an one away from the city, and our parents only takes us to the city once in a while. That I am always excited to hear stories about the tall buildings, or how to ride in a train. As far as I can remember my first train ride was when I was 15 years old. I can still remember how excited and scared I was that day.

Now lets go back to the topic. Are you running out of an idea for Christmas present. There is one person in our life that we could not think of something to give them, because we thought that they have all what they need. It could be your boss or a friend. Why not give them something that you made, it will make them more special because you put effort and love on it.

I got an easy and cheap idea.

Have you seen that little cookies in the photo? Isnt it looks so cute and delicious?
They are so good. They are creamy coconutty goodness in your mouth. The texture is crumbly like a meringue but when chew its creamy and melts in your mouth.

Here is the recipe for you to try:

Ingredients:

1 cup coconut milk
1/2 cup white sugar
Pandan leaf
1 egg yolk
260g Tapioca starch
Food coloring if desired

Procedure:

  1. Combine coconut milk, sugar and pandan leaf in a pot and simmer for 25 minutes, stir occasionally, until thick and syrupy consistency.
  2. Remove the pandan leaf and let it cool until its lukewarm and then stir the egg yolk.
  3. In a large bowl combine tapioca powder with the coconut syrup. Using your hand knead the dough until smooth. If you feel the dough is dry add a little water at a time.
  4. If you want to put color divide the dough into portions and knead in food coloring until smooth. Let the dough rest for 30 mins, cover it with cling wrap so it wont dry out.
    Meanwhile preheat your oven to 160 C
  5. Form the cookies into a small ball place them in a cookie sheets like with parchment paper. Baked it for 20-25 minutes or utnil the bottom part of the cookie is slightly browned.

Enjoy!
Once cooled down package then in an airtight container.
