This easy chicken curry is ready in 30 minutes. Quick and good! Serving with some basmati rice.
Chicken Curry
INGREDIENTS:
1 1/2 pounds boneless chicken thighs
1 cup diced onions
1 cup diced tomatoes
1 can coconut milk
3-4 cloves minced garlic
2 tsp. curry powder
1 tsp. turmeric
1/4 tsp. red pepper flakes
pinch coriander
salt and black pepper
oil
Saute onions and garlic in oil on med heat for 2 min.
Add tomatoes and spices. Stir and cook 1 minute.
Add chicken and stir until coated.
Add coconut milk and simmer for 15 minutes or until chicken is done.
Serve with basmati rice and garnish with a little more coriander.
