Tonight I enjoyed the much beloveded Mexican soup Pozole.
I’ve only had it once before a couple years ago, and that first time wasn’t very memorable. Whoever made that batch didn’t make it very flavorful or tasty. Simply put, it was incredibly bland.
This version of the soup was much, much better!
My first reaction to the soup this time was that I was eating a soup version of a tamale.
Warm, spicy and hearty, with hominy blunting the swirling strong flavors with a nice mild corn flavor.
And of course you can’t forget the toppings. This was lettuce (last time it was cabbage), radish, onion, cucumber, lime... and salt and extra red salsa for whatever desired extra heat you need...!
