It's me again with another recipe =)
There is no better meal for hot weather than a good salad. Salad is often boring so I'm being a bit creative with the ingredients. With more variety comes more motivation to eat healthy :)
The highlight: No lettuce is needed, instead we use chickpeas!
Ingredients
For two persons you need:
- 4 hard-boiled eggs
- 1 can boiled chickpeas (approx. 240g drained net weight)
- some cherry tomatoes
- some champignons
- 1 red pepper
- 1/2 cucumber
- 1 red onion
- fresh basil leafs
Dressing
- 1 tbsp. of honey
- 1 tbsp. of mustard
- 6 tbsp. of rapeseed oil (olive oil works as well)
- juice of half a lemon
- 1 tsp. of vegetable stock
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of cumin
Preparation
Keep in mind: if you don't use canned chickpeas you need to prepare them one day before because they need to be soaked in water and cooked afterwards. Just follow the instructions on your dried chickpeas packaging. With boiled chickpeas you don't need to prepare much and your salad will be ready in 5 minutes but they don't taste as good as self prepared, dried chickpeas.
First drip off the chickpeas and spread them evenly on both plates. Then wash, clean and chop the vegetables and mix them with the chickpeas. Use as much vegetables as you like, my indications of quantity are only guidelines. Then cut the eggs into quarters and place them on top. Lastly scatter some basil leafs over the salad.
For the dressing simply mix all listed ingredients. If you warm up the honey in the microwave first (low temperature for 30-60 seconds) this should be very easy. Pour some tablespoons of your dressing over the dishes, serve and enjoy :)
