We have all had those days where you come home, you're tired but you still need to feed the family... sigh right???
THE GOOD NEWS
Today I'm sharing my Alfredo recipe with you. It is quick, easy and more important it is really yummy.
Ingredients
This recipe serves between 4 -6
you will need:
500g Pasta (your choice)
400g Bacon cut in strings
250ml fresh cream
milk
1 large onion (optional)
200g mushrooms (optional)
1 packet of cream of mushroom soup powder
salt and pepper
butter
70g grated cheese
oil for cooking pasta
Method
Pasta
*put pot with warm water on the stove, add salt and oil and bring to a boil.
*add pasta to the water and put on the lid. (if the water starts boiling over turn the heat lower and remove the lid for a while.
*cook until pasta is soft (to test with spaghetti, take a strand of pasta, if it bends easily it is ready but to be safe you can also taste, when you bite into the spaghetti if it is still a little hard let it cook for a few more minutes)
Sauce
*melt butter in a pot and add bacon.
*when bacon is just about cooked add onions
*if you like mushrooms in your food add when bacon is fully cooked and soften them.
*mix soup powder with milk until there are no lumps.
*add soup mixture to the bacon
- pour in the cream and let simmer. (stir occasionally to assure it doesn't burn)
*if the sauce is too thick add milk, the sauce needs to be thick but runny.
*add cheese and mix until the cheese is dissolved.
*add salt and pepper to taste
BEST SERVED WITH
garlic bread or salad or on its own
Additional Options for Bacon
Because I know that some religions and in cases of health some people are not allowed to have bacon, a great additional option is to replace the bacon with strips of chicken breasts. Season chicken when cooking it for the best results.
Vegetarian option
Replace the bacon with green peppers or spinach.
for best results
cook the onion in the butter until the skin is yellow, add mushrooms. add soup mixture and lit boil. add the chopped green peppers or spinach before the cheese.
This really is a fast and tasty recipe. I made it about 3 weeks ago for 15 people and all of them loved it.
