Vegan Honey Balsamic Bean Salad

Loaded with protein, this very salad is fast, simple and scrumptious-- not to mention is low in fat! Think about including avocado for a bit of additional creaminess.

8 oz/ 225 g (about 1 1/2 cups) EACH prepared chickpeas, pinto beans, black beans
1 little head of romaine lettuce, cleaned, dried, shredded
1/3 cup/ 1 oz/ 30g sliced almonds, toasted
2 teaspoons extra-virgin olive oil
1 1/2 tablespoons runny honey
2 tablespoons balsamic vinegar
1 1/2 tablespoons fresh lemon juice
1/4+ teaspoon very fine grain sea salt
10 sprigs fresh thyme

Add the beans, lettuce, and the majority of the almonds in a big salad bowl. Put to one side. Make the dressing by blending the olive oil, honey, balsamic vinegar, lemon juice, and sea salt in a little container. Taste, and then adjust to your own taste.

Run your fingers up each thyme sprig, getting rid of the leaves. Put into the salad bowl and put in a really good amount of the dressing you have made. Toss well, and include more dressing if you like. Now add in the rest of the almonds.

Serves 4- 6.
