Today, I walked for 50 min and did some grocery shopping (~50$).

I got a couple of new fancy stuff to try:

  1. Coconut sugar,
  2. Some Japanese sweets and
  3. Powdered Peanut-90% less fat which will be a great way of adding extra protein (minus the fat) with the yummy peanut butter taste. I hope it tastes good though! Will let you know 😉

So....

What's on the menu for today?

BreakfastNutritional Value: ~ 500 Cal

I had oatmeal with different nuts and a dash of cinnamon and brown sugar. It was really yummy! 😍

LunchNutritional Value: ~ 80 Cal

I didn't feel much hungry to eat lunch today. So I had a cheese stick on my way to grocery shopping


DinnerNutritional Value: ~ 550 Cal!!

In order not to get bored using leftovers, I revamped the simple Tuna salad I had a couple of days ago. I added some feta cheese, slices of black and green olive, green pepper, pickles and avocado. I also used mustard and ketchup which gave it more zest. It tasted yummy and the avocado added a buttery-nutty flavor to it 😁

I also tried the Japanese sweets I bought today. They were exactly what I wanted to finish the meal

Here are the calories of my dinner


Midnight snackNutritional Values: ~ 250 Cal

I am not sure If I will have midnight snack, but in case I do, I still have about 300 extra calories I can eat before reaching my daily limit. Which is always great 😁

I may either have bluberries with lime yogurt

or

a slice of Chocolate cranberry loaf with some hot milk



Estimated Total Cal Intake: ~ 1350 (With either midnight snack)

Estimated Total Cal Burned: ~ 1600 (based on Fitbit)

Estimated Total Spending: ~ 6$



Final Notes:

  • Eating healthy is a great way to look forward to enjoying meals.
  • Revamping the Tuna salad was a good idea. I am enjoying the challenge of discovering simple, yet healthy food to eat everyday 😄.

Great. You are off to a healthy new year. I love granola. The kids won't eat it thought. I guess it is too crunchy for them. We got some Japanese rice cakes today from a friend. Some Japanese snacks taste like seaweed but the rice cakes are sweet and yummy. I usually watch my cholesterol and eat healthy foods but today we ended up eater at Burger King. It was either wait forty minutes for our favorite Korean restaurant or eat at Burger King and the kids won. You can't go wrong with home food. Great job!!

Yes my dear @mineopoly, all thanks to your support and the support of others. I haven't tried the seaweed japanese snacks yet. Are they any good? I like their rice cakes as well.

Thats the great thing about not having kids! But I would love to have them eventually even if they come with a side dish from burger king ;D

For cholesterol, best to avoid food with saturated fat and increase your intake of iron-full food. AT least that worked with me when I had high cholesterol. But mine was mainly related to poor diet and anemia. How is your blood iron?

That oatmeal looks delish! I am also patiently waiting for some recipes (maybe in the future).

First time I cooked oatmeal it crushed my soul for it turned out downright depressing..a complete unedible mess😄

Hahaha! I tell you my secret. I use oatmeal that cook in one min by just adding hot water or hot milk ;P

Oooo...I am a primitive man by comparison dear Doctor - my morning routine as a rule starts off with a cuppa, with maybe a couple of ginger biscuits, followed an hour or so later with a quarter cup of raw rolled oats and the cup filled three quarters with cold milk - and that is basically it, no sugar, no nothing - except for some vitamin supplements, when in supply and maybe a handful now and again of nuts/raisins/dates/berries through the day, when not in short supply.

With the rest I won't overload this comment - only that I try not to neglect my intake of fruits and veggies and that I think I sleep best (late night guy) with a fair helping of protein not too late in the evening.

And calories...no, I suspect my metabolism eats them up faster than I would be able to count them.

With your diet and probably your metabolism, I don't think you need to count any calories my dear @clicketyclick .

If I don't plan all of this, I usually tend whatever my hands encounter all day long. So, planning and sharing makes the process of preparing and eating more enjoyable :D

Everyday, I look forward to what I will be cooking because I want to share it with my steemit friends :D

50 minutes is a good walk ~ I did something similar. Great way to start the day.

I've started using coconut sugar in my kombucha now. Some people say you have to use white sugar for the kombucha to ferment, but the coconut sugar (mixed with organic dark brown sugar) works great. 🦋

Honestly, I don't start my day with exercise at all. But I try to be active for at least 30 min a day (Mainly I do activities like walking and dancing).

I am thinking to use the coconut sugar occasionally in my oatmeal or other breakfast food, since it is way too expensive to buy regularly (until I start making lots of money that is ;D)

Do you drink the Kombucha or eat it like oatmeal? I have seen it sold as a drink with added flavors (like ginger or lemon)

See yourself using coconut sugar whenever you want to ~ And give thanks for having it already. It will come.

Kombucha is a healthy drink. Some feel it's an acquired taste, but I took to it like a 'duck to water.'

Easily made by floating a SCOBY (Symbiotic Culture Of Bacteria and Yeast) in a sweetened tea mixture and fermented at room temperature for about a week. I use good quality organic black tea for the first ferment and then add fresh ginger and green tea to it in the second ferment.

It's become very popular now. But generally the commercial varieties don't have quite the same beneficial qualities as one you make yourself.

The porridge and the tuna salad were yummy indeed. Nothing like a real chef would make though ;D

I used not to like porridge when I was younger, but now I love it because I love the taste and crunch of nuts and fruits with the oat :D
