Ingredients:
1/2 cup beans (soaked overnight) and cooked until tender
1 cucumber diced
1 red and yellow pepper diced
1 onion diced
1 tomato diced
a handful chopped parsley
1/2 lemon (squeezed the juice out of it)
drizzled of olive oil
Directions:
Rinse and drain the cooked beans.
Toss the beans with the other salad ingredients and transfer to a serving bowl.
