Honey Cookies

INGREDIENTS

  • 50g sugar
  • 1/4 teaspoon cardamom
  • 50g butter
  • 1/4 teaspoon soda
  • 1 teaspoon ground cinnamon
  • 100g chocolate
  • 100g honey
  • 2 cloves
  • 3 eggs
  • 1/4 teaspoon salt
  • 250g wheat flour
  • 5 ml brandy


The first step is to prepare the syrup. Pour 3 tablespoons of water and sugar into a small saucepan, and cook the mixture over low heat until sugar is dissolved. Add honey and spices – cardamom and cloves – to the hot syrup. Let it cool.

Separate the yolks from the whites and rub them with butter and the syrup.

Mix thoroughly

Sift flour, salt, baking powder (or soda) and cinnamon into a bowl.

Mix the flour mixture with the honey mixture and knead the stiff dough.

Form a ball from the dough, wrap it in plastic wrap and put in a warm place for 1 hour.

After an hour roll the dough into sausage and cut it into pieces. Form a crescent-shaped sausage from each piece. Lay the crescents on baking paper and place in the oven for 15-20 minutes at 170 degrees. Cookies must acquire a golden hue.

Melt the chocolate on a water bath and add some brandy.

Carefully dip the ends of the cookies in hot chocolate. Lay the cookies on the grid; put an oilcloth under the grid (because chocolate will drip). Put the grid in a fridge.

As soon as the chocolate hardens, you may serve the cookies.
