Cheese Cake with raspberry coulis

Ingredients

For the base:

 1 package of Breton shortbread biscuit or cinnamon biscuits speculoos
 60 g salted butter

For the cream:

 6 little Swiss
 300 g of fresh square
 4 eggs
 100 g of sugar
 Vanilla or lemon peel)

For the grout:

 500 g raspberries
 3 spoons of sugar
 1 lemon juice

Preparation

Preparation time: 20 min
Cooking time: 55 min

Step 1
Preheat the oven to 180 ° C.

Crush the cookies. Add the melted butter. Spread this preparation at the bottom of the mold covered with parchment paper. Put in the oven time to prepare the cream.
Step 3
Whisk the eggs with the sugar until the mixture whitens. Add the petits-suisse, the fromage frais and the perfume. Smooth the preparation (with the mixer or in a robot).
Step 4
Pour on the bottom of cookies and bake.
Step 5
Cook for about 55 minutes at 1 hour and let cool inside the oven, door open. Then put in the refrigerator at least 10h.
Step 6
Serve with a raspberry coulis.
Step 7
Mix half of the raspberries with sugar and lemon. Add the whole raspberries.
