The Spicy Indian #17- Kaju Ki Barfi

It is a festive season in India as Deewali, the festival of lights, is just around the corner. As you may already know, we Indians like to prepare and enjoy a lot of sweets during the festive seasons and since Deewali is one of our most important festivals, you can imagine the different varieties of sweets and the sheer amount of them that we either buy or make at home.



Today, I want to share with you all a recipe of one such sweet that is very popular and loved throughout India. It is called Kaju ki barfi and if you taste it once, you will become a fan for life. So, let me tell you how to prepare it.


How to make Kaju- Barfi


Course: Sweets
Cuisine: Indian
Preparation Time: 15 mins
Cooking Time: 10 mins
Total Time: 25 mins


Ingredients



  • Broken cashew nuts- 1 cup (200 grams)
  • Powder sugar- 1/2 cup (50 grams)
  • Milk Powder- 1/2 cup
  • Cardamom powder- 1/2 tbsp
  • Melted ghee for greasing


Method



1. Take a blender and make a fine powder of the cashew nuts.




2. Now take sugar and add it in ¼ cup of water in a non-stick pan and cook it on a medium flame for 4-6 minutes, with continuous stirring.




3. Now take the cashew nut powder & milk powder and add it in the sugar syrup and mix it well and cook it on low flame for another 2-3 minutes with continuous stirring.




4. Add the cardamom powder into it and mix it well. Grease a plate with melted ghee and transfer the mixture to the plate and spread it evenly.




5. Allow the mixture to cool for 5 to 6 minutes and cut it into equal-sized diamond shaped pieces.




6. Garnished with silver and serve it immediately, or you can also store this in an air-tight container.
