The Spicy Indian #22 - Instant Rabri

Lately, I have been in the mood for a lot of sweet desserts and you might have noticed this in my recent recipe posts as well. What can I say, the heart wants what the heart wants! Today, I am going to be sharing with you all another recipe of another dessert that originates from the Indian subcontinent and it is called rabri.





Though Rabri is loved around the country, it can be a little difficult to prepare. Well, not exactly difficult but time consuming. Whenever people think about making rabri at home, most of them feel tired just by the thought of it because it’s too time taking but no doubt it's delicious. So here, I am posting a quick and instant recipe of rabri.


How To Make Rabri




Course: Sweets
Cuisine: Indian
Preparation Time: 10 mins
Cooking Time: 15 mins
Total Time: 25 mins


INGREDIENTS






Full-fat milk- 3 cups
Fresh bread slices- 2
Sugar- 1 tbsp
Condensed milk- 1/2 cup

For Garnishing



Cardamom powder- 1/4 tbsp
Almonds chopped- 1 tbsp
Pistachio chopped- 1 tbsp



METHOD





  1. First of all, you would need to cut the thick sides of the bread slices and discard them. Then you need to grind the bread slices in a blender and make fresh bread crumbs and keep it aside for a while.





  2. Then, boil milk in a broad non-stick pan. Now add the fresh breadcrumbs, sugar, and condensed milk and mix it well. Cook it on a low flame for 13 to 15 minutes, with continuous stirring.




  3. Allow it to cool and refrigerate it for 3 to 4 hours.
    Serve it chilled and garnished with cardamom powder and almonds.

Had my best rabri to date at Lucknow, India a few years ago. The taste still lingers in my mouth. I think I need to make a trip there just for the biryani, kulfi and rabri.
