The Spicy Indian #4- Vada Pav

Vada pav is a very famous Indian street food snack. It is extremely popular in Mumbai as the roadside snack. Pav is the soft bun, and Vada is a spicy potato mixture coated with gram flour batter and deep fried. Vada Pav consists of various spices and garnishes with the mint and garlic chutney. It is effortless to cook and loved by everyone.


Here is the simple recipe of the very famous Vada Pav.

INGREDIENTS



1. For The Spicy Potato Balls


  • Fresh green chilies- 2 finely chopped
  • Vegetable oil- 2 tablespoon
  • Black mustard seeds- 1 tablespoon
  • Asafoetida- Pinch
  • Fresh curry leaves- 3-4
  • Boiled mashed potatoes- 350g
  • Turmeric powder- ½ tablespoon
  • Fresh coriander leaves chopped- 4 tablespoon
  • Sea salt to taste
  • Vegetable oil, for deep-frying


2. For The Batter


  • Gram flour- 100g
  • Turmeric- ¼ tablespoon
  • Water- 100ml


3. Garlic Chutney


  • Garlic cloves- 10
  • Peanut oil- 5 tablespoons
  • Dry, desiccated coconut- 35g
  • Chilli powder- 1 tsp


4. Green Chutney


  • Fresh coriander- A large bunch
  • Fresh mint leaves- A large bunch
  • Fresh green chillies- About 5
  • lemon Juice- 2tablespoon
  • 1 tbsp vegetable oil



METHOD



1. For The Spicy Potato Balls




  • Mash green chillies, garlic and ginger together in a blender. Now heat the vegetable oil in a pan and add the black mustard seeds and cook until they pop.
  • Add the pinch of asafoetida and the curry leaves and cook for 10 seconds.




  • Now add the ginger, garlic and chilly paste in it and cook for 1 minute.




  • Add the mashed potatoes, turmeric and salt in the pan. Now add the coriander and mix well.




  • Remove it from the flame and allow it to cool. Now make 1-inch sized balls of this mixture.


2. For The Batter





  • Mix all the batter ingredients in the deep bowl, and make the batter of little thick consistency.




  • Dip all the potato balls into the batter and coat them evenly.




  • Deep-fry the balls till they turn golden brown.




  • Drain the excess oil on absorbent paper.


3. Garlic Chutney





  • Gently caramelise the garlic cloves in a frying pan with a little peanut oil.
  • Now add coconut, stir it until golden. Blend all the things with the chilli powder and the remaining tablespoon of peanut oil and salt.


4. Green Chutney





  • Take a blender and put coriander, mint, green chillies and lemon juice with a splash of water in it.
  • Now add the vegetable oil, some salt, and blend it well.


How To Proceed





  • Slice the pav into half and spread some garlic and green chutney inside.




  • Now place one vada in pav.




  • Serve immediately.

Hi , I was looking for a garlic chutney recipe. This helps! thanks.

For those of you , who are lazy to make two different chutney you may put some garlic cloves and green chilies in the coriander chutney. I make it that way and it also tastes good.
