Under $20, what's for dinner? Fillipino Adobo Chicken!

Tonight I decided to do something a little different, a little out of my comfort zone. In comes adobo chicken!

It's still within my taste profile, so I'm sure It'll be tasty, but I haven't executed this dish before, So will it be a win, or will I flop?

Ingredients:
Ingredients

  1. ~2 lbs. chicken, cut to bite size chunks
  2. 3 - 5 bay leaves
  3. 5 tbsp soy sauce (kikkoman preferred)
  4. 2 tbsp white vinegar
  5. 3 cloves garlic peeled and minced
  6. 2 cups water
  7. 1/4 cup cooking oil
  8. 1/2 tablespoon white sugar (or 1/4 cup honey)
  9. Salt and whole or fresh ground peppercorn

Directions:

  1. In a large container, combine the soy sauce and garlic then marinade the chicken for at least 1 to 3 hours

  2. Optionally add Sriracha for heatoptional
  3. Place the cooking oil in a pan and apply heat
  4. When the oil is hot enough, add chicken. Cook while stirring for 5 minutes.
  5. Pour-in any remaining marinade and add the water, then bring to a boil.

  6. Add the bay leaves and peppercorn. Simmer 30 minutes or until chicken is tender byleaf&peppercorn
  7. after 30 minutes, add vinegar and vegetable. Stir and cook for 10 minutes. vin&veg
  8. Add the sugar, and salt, cook down a little more, while stirring, then turn the heat off.

Remove bay leaves, and serve with rice, preferably with friends and family!
