Tonight I decided to do something a little different, a little out of my comfort zone. In comes adobo chicken!
It's still within my taste profile, so I'm sure It'll be tasty, but I haven't executed this dish before, So will it be a win, or will I flop?
Ingredients:
- ~2 lbs. chicken, cut to bite size chunks
- 3 - 5 bay leaves
- 5 tbsp soy sauce (kikkoman preferred)
- 2 tbsp white vinegar
- 3 cloves garlic peeled and minced
- 2 cups water
- 1/4 cup cooking oil
- 1/2 tablespoon white sugar (or 1/4 cup honey)
- Salt and whole or fresh ground peppercorn
Directions:
- In a large container, combine the soy sauce and garlic then marinade the chicken for at least 1 to 3 hours
- Optionally add Sriracha for heat
- Place the cooking oil in a pan and apply heat
- When the oil is hot enough, add chicken. Cook while stirring for 5 minutes.
- Pour-in any remaining marinade and add the water, then bring to a boil.
- Add the bay leaves and peppercorn. Simmer 30 minutes or until chicken is tender
- after 30 minutes, add vinegar and vegetable. Stir and cook for 10 minutes.
- Add the sugar, and salt, cook down a little more, while stirring, then turn the heat off.
Remove bay leaves, and serve with rice, preferably with friends and family!
