RE-NOURISH SHEPHERD'S PIE

🍲It’s a classic which pretty much everyone has their own way of making!
👍🏻Like all #ReNourish recipes, I keep it really simple so you'll find it hard to go wrong.
🥗If you’re no red meat eater then try turkey mince or quorn mince for veggies or vegans.
😊This is a meal for chilly days and all about comfort. So get comfortable and line up a box set on #Netflixandchill!

SERVES 4
For the topping
600g sweet potatoes, peeled and chopped into chunks
1 tbsp butter
1 garlic clove, thinly sliced
1 tsp dried rosemary
grated zest of 1 lemon
1 tbsp olive oil
salt and black pepper

For the base
1 tbsp olive oil
1 onion, finely chopped
1 carrot, sliced
1 courgette, sliced
2 garlic cloves, finely chopped
few sprigs of thyme
500g mince
175g mushrooms, chopped
6 small sun-dried tomatoes, chopped, + 2 tbsp oil from jar
50ml veg stock
150g cooked puy lentils (ready-cooked or cook 75g dried lentils)
1 tbsp balsamic vinegar
50ml red wine (optional!)
handful of parsley, chopped
salt and black pepper

RECIPE
1️⃣Put the sweet potatoes into large pan of cold water and place over a high heat. Bring to boil, then simmer for 10–15mins.
2️⃣Drain the potatoes, add the butter and season with salt and pepper. Mash until smooth.
3️⃣Meanwhile start preparing the base. Add the olive oil to a large pan and sauté the onion, carrot and courgette for 3–4mins, then add the garlic and thyme. Now add the mince and cook for 5–10mins.
4️⃣Add the mushrooms, sun-dried tomatoes and oil from the jar. Cook for a further 2–3mins, then add the stock, lentils, balsamic vinegar and red wine, if using. Bring to the boil, then reduce to a simmer and cook for another 15–20mins until the sauce is thickened and reduced. Meanwhile, preheat oven to 180c fan.
5️⃣Stir in the parsley, season to taste and transfer the mixture to a baking dish. Spread mash over the top, scuffing it up with a fork. Sprinkle over the garlic slices, rosemary, lemon zest and olive oil. Transfer to oven for 10mins and finish under the grill for that crispy golden top.
