If you want to delight your palate with an exquisite super healthy carrot cake, prepare this fantastic recipe that will leave you wanting to eat more and more. And the best thing of all is that you do not need an oven to make it, so there are no more excuses and hands to work
For this recipe you will need the following:
2 cups all-purpose flour
2 medium carrots
1 cup vegetable oil
½ cup walnuts
¼ cup raisins
½ cup of sugar
½ cup of papelon
2 teaspoon ground cinnamon
3 eggs
1 teaspoon baking soda
2 teaspoons baking powder
1 pinch of salt
1 teaspoon vanilla
Having all the ingredients ready, we go with the preparation. In a bowl place the eggs, sugar, papelon, cinnamon, vanilla and oil, you will beat it until all these ingredients are well integrated. Then add the nuts, the raisins and the carrot when they are well mixed. Join the previously sifted flour with the teaspoon of baking soda, baking powder and the pinch of salt in an enveloping way. For cooking use a non-stick pot with a lid that has been previously greased and floured, empty the mixture in it, then the lid of the pot is wrapped in aluminum foil and a clean kitchen towel. We place the pot on a very slow fire approximately 45 min. It is always better to be aware of how the cooking is going so that it doesn't burn
