Versatile Carrot Cake recipe.......very moist and delicious!!! Zucchini Bread and Banana Nut Bread too!!!!!!!

This is my go-to recipe for making the best Carrot cake, Zucchini Bread and Banana Nut Bread ever!!!!!!!!! It also freezes really well I make mine in 2 small throw away aluminum pans and freeze, great for giveaways too.

CARROT CAKE
10" cake pan/2 small loaf pans
Oven set 350'

INGREDIENTS:

2C Sugar
1 1/2C Canola oil
4 Beaten eggs
3C Flour
2t Baking soda
2t Baking powder
2t Cinnamon
1t Salt
3C Grated carrots
1/2C Chopped nuts (I prefer Walnuts)
1t Vanilla

DIRECTIONS:

Cream sugar and oil, add eggs and vanilla. Mix well, fold in dry ingredients, then fold in carrots and nuts. Bake in a greased and floured pan. Bake about 1 hour, check with toothpick. Cool 10 minutes then remove to rack. Best when served with Cream Cheese Frosting. You can also make Zucchini Bread out of this replace carrots with 3Cups of raw grated zucchini(drained) and add 1t cloves to the mixture. I also use this recipe for Banana Nut Bread use 6-7 blackened over ripe bananas and reduce the cinnamon to 1teaspoon.

Over ripe bananas are the secret to a really good banana nut bread!!!!
