Hiya Everyone! Tori here! Today, I'll be showcasing a popular condiment for dishes here in the Philippines. Atchara is usually served as an appetizer or a condiment, it is made up of pickled green papayas which are julienned or grated. Pickling is a fermentation technique that preserves food by immersing it in vinegar, it can also enhance its flavors. It is mixed with onions, garlic, ginger, peppercorns, and even red bell pepper. It is sweet and sour and is usually serve during barbecues and along fried dishes to bring out freshness.
