Happy start of the week for everyone, I hope you are well and have had a very good and wonderful week, today I bring you a recipe quite original and delicious, they attract me and say that I have never seen a recipe like this before .. Is a delicious VAINILLA CAKE with COCONUT FILLER and covered with PEANUT BUTTER!! It is an exquisite recipe, very easy to prepare, with few ingredients ... and is perfect to vary a bit the typical chocolate cake.
- We are going to need...
A coconut.
2 cups flour.
1 cup of sugar.
Vanilla.
2 Eggs
1 bar of butter.
Coconut water + 1/2 cup of milk.
1/4 cup of oil.
Baking powder.
Peanut butter.
- Let us begin ...
We begin to beat the two eggs together with the sugar, until a homogeneous mixture is formed.
Add the butter, the essence of vanilla and oil, beat until they are completely integrated.
Little by little we will place the mixture of coconut water plus previously heated milk.
Place the flour together with the baking powder, and finish placing all the coconut water with milk.
Beat to form a homogeneous mixture.
We take the oven in a suitable mold for 40 minutes at 300ºC.
While we make the filling.
For the filling we are going to open the coconut, and chop it into pieces.
We grate the pieces to have the grated coconut.
In a pot over low heat place a half cup of milk, a spoonful of sugar, a tablespoon of cornstarch and half the grated coconut.
Beat until the mixture is thick and remove from heat.
- When our cake is ready, the images in half and place the mixture. *
Decorated on top with peanut butter and grated coconut that we have left over.
