Moomin biscuits with cream & jam filling.

Ingredients:

250g/9oz plain flour
200g/7oz butter, cut into small cubes
100g/3½oz icing sugar
pinch of salt
2 free-range egg yolks
Filling: Jam & creamcheese

Method:

—-Preheat the oven to 170C/325F/Gas 3.—-

Mix flour, butter, icing sugar and salt into a bowl. Using your fingertips, rub the ingredients together until the mixture resembles breadcrumbs.

Add the egg yolks and mix until a dough forms. Turn out onto a lightly floured work surface and roll out to a thickness of about 0.5cm/¼in. Remember to cut two of each. You can be creative here and cut out sections of your biscuit e.g. eyes, hearts etc but remember to just cut the top biscuit!

Bake the biscuits for 10-12 minutes, or until light golden-brown and crisp.

Allow to cool on wire rack.

Once cooled, take two biscuits, spread cream cheese on one and then dollop jam onto to make a biscuit sandwich. You can choose to decorate with biscuit tops with icing pens.
