Foodie in the Kitchen Series #3 - Roman Style Tripe (Trippa alla romana)

I'm a big fan of offal meats, but it is certainly not for everyone. From short ribs to oxtail and everything in between. Tripe was once a very popular staple in the Italian diet especially in Rome.

Cooked Tripe cut into bite sized pieces

The tripe is then added to the tomato and white wine mixture and simmers

Then you serve it up and make it pretty, I served mine on angel hair pasta. It was AMAZING
