If you're not familiar with Gumbo, its a all-in-one-pot stew that originated in Southern Louisiana, USA. Gumbo consist of a rich stock, meat or some kind of seafood, a thickening agent (roux) and the Holy Trinity, (celery, bell peppers and onions). I found a recipe which allowed me to prepare this in a Cock Pot, this was Memorial Day dinner. Enjoy

The first step is making the Roux, this is Flour and Fat. I used Oilve Oil and Butter

Notice the change in color

This is the color I was looking for, a dark and rich reddish color. You'll have to stir your Roux constantly, failing this step could result in you having to start the process all over again. Don't scorch your Roux.

Very similar to some south American recipes, mixing seafood with sausage sounds like a shot bro.

Lots of these recipes have so many influences. I'm sure this came originally from Africa.
