This dish is a Filipino trademark. Some say you're not a Filipino if you have not tasted and eaten this delicious dish. It's very common to Filipino households because it offers great satisfaction to hunger.

In our community we called it "Humba." I don't the origin of the name. What I know is that whenever you ask any Filipino of their favorite Filipino dish, Adobo is always in the list.

Adobo has different varieties depending on the taste of the chef. It is also available with chicken meat.

Ingredients:
2 lbs pork belly
2 tablespoons garlic minced or crushed
5 pieces dried bay leaves
4 tablespoons vinegar
1/2 cup soy sauce
1 tablespoon peppercorn
2 cups water
Salt to taste
