Main ingredients :
600g lamb
6tbs oil
Large onion , chopped
Salt
¼ teaspoon black pepper
¼ teaspoon ginger
½ turmeric
Few saffron threads
1 small cinnamon stick
Water
A teaspoon of clarified butter (optional)
250g dried prunes (soaked in water for 1hour)
½ tbs of powdered cinnamon
2 tbs powdered sugar
A teaspoon of butter
Teaspoon orange blossom water
100g of blanched and fried almonds
Step by step :
- Put the oil in the tajine or a cooking pot, heat it up.Then add the lamb Fry it a little bit and then add the onion , Fry it until its transparent , add the saffron the turmeric , ginger, pepper , Salt , the clarified butter if added and the cinnamon stick.
- Cook for 5min and then add enough water to cover the meat , close the pot and cook on a medium heat for 1hour, or until the meat is tender.
For the prunes :
- Put them in a casserole and add the sugar, powdered cinnamon, butter, orange blossom water .
- You can some of the sauce where the lamb is cooked to add more flavour.
- Let it cook until the prunes are tender .
Serving :
Serve the tajine with the caramelised prunes and fried almonds, you can add some hard boiled eggs for decoration.
