300 g all-purpose wheat flour
440 ml. of water
1 teaspoon of salt (5 grams)

soft olive oil for frying

How to prepare churros There is no corner of Spain where churros are not made. From North to South of the peninsula churros are always a welcome resource, for a breakfast or a snack accompanied by a good hot chocolate or simply a coffee with milk.
This sweet, simple and traditional, is nothing more than a dough based on flour, water and salt, fried in plenty of oil and served at the moment sprinkled with sugar. The simplicity of its ingredients and process do not reflect the good and rooted in our culture of this recipe.
They are supposed to be of Moorish origin, Quevedo and Lope de Vega mentioned them in their texts. Many years later it appears in the General Dictionary of cooking in 1892. Despite being a common element in the cuisine of all communities, there are many and subtle differences in their form or preparation depending on where we are. Its shape can be straight, in bow or stick, can be filled with chocolate ganache, custard or dulce de leche or simply sprinkled with sugar.

Preparation of the churros
We put the flour in a large bowl.
In a pan heat the water with salt. When it starts to boil, pour it directly and in one go on the flour. We integrate the flour with the water with a wooden spoon. We will have a very sticky and quite compact mass.
If you have a machine to make churros, you fill it with the dough. As I suppose most of you will not have it, we will use a pastry bag with a star shaped nozzle.
The pastry sleeves can be made of disposable plastic. You can find them in pastry shop stores or online stores of creative confectionery.
We are making the portions of churros with the raw dough on a kitchen towel. We put to the fire a frying pan with abundant oil. When hot, introduce the portions of dough for frying. Cook over medium heat to prevent the churros from getting raw inside.
Once fried we remove to a tray with kitchen paper to absorb the excess oil.
We serve sprinkled with sugar.
