1 | Sate Padang

Composition:
500g beef
500g cow tongue
1.5 liters of water
6 lime leaves, tear the edge
1 stem lemon grass, mashed
1 inch galangal, mashed
1 inch ginger, mashed
150g rice flour, add 150ml water

Grinding spice:

2 tablespoons roasted coriander seeds
1 teaspoon fennel seeds
5 garlic cloves, peeled

How to make:
Beef preparation: Put the beef and tongue into the pot and cook for about 5 minutes. Blanch and scrape off the white layer on your tongue. Now cut the beef and tongue into two × two × 3 cm small pieces should not be cut too small to avoid rotting during cooking.
Beef cooking: marinate the beef and tongue with ground spices in the pot for 30 minutes, then add water, kaffir lime leaves, lemongrass, galangal and ginger. Bring them to a boil, then simmer over low heat for about 30 minutes. After cooking, remove the beef and tongue from the broth and discard the herbs and spices. Filter and save about a liter of broth for later use, then season with salt depending on your taste.
Barbecue: put the meat and tongue pieces on the soaked stick, and insert 3-4 pieces of meat and tongue pieces into each stick. Get your grill ready and brush oil on both sides of Satay. Roast until slightly brown. Don't bake too long, or the meat will become hard and dry.
Preparation of gravy: first boil the broth, and then add the rice flour mixture. Stir continuously to reach the required concentration. Turn off the heat, pour the sauce on the satay, and eat it while it is hot.
2 | Sate Madura
For Indonesians, whenever the word "satay" is mentioned, the word "Sate Madura" comes to mind: a kind of meat skewer dish made of peanut butter and sweet soy sauce. As the name implies, this dish originated from Madura Island in the north of East Java Island. Because it is usually sold by cart peddlers in the evening to late at night, Madura Satay is easy to find. But you can also do it yourself.
Satay ingredients:
600g chicken leg, cut into 1/2 inch cubes
4 tablespoons sweet soy sauce
2 teaspoons vegetable oil
25 bamboo strings
Peanut butter ingredients:
250g roasted peanuts
3 Chestnut
6 Red pepper
4 tablespoons coconut palm sugar
Salt needs to be tasted
600 ml water
How to make:
Peanut butter: Grind peanuts, chestnuts and peppers in a blender or food processor. When the paste becomes smooth, transfer it to the sauce plate, add the remaining peanut butter raw materials, and boil it. Turn down the heat and let the sauce simmer until thick. Turn off the fire and set it aside.
Satay: Mix chicken, sweet soy sauce, oil and 150g peanut butter in a bowl and marinate for 30 minutes. Then string the chicken on the bamboo string. Bake the skewers until cooked or slightly burnt, and marinate them as needed.

3 | Sate Maranggi
Many Indonesian residents are still debating whether the dish is from Purwakarta or Cianjur. However, there is no doubt that Sate Maranggi is absolutely delicious. It may be the simplest Indonesian satay you can make in the kitchen. Unlike Madura Satay and Padang Satay, Sate Maranggi does not require peanut butter or gravy. Instead, these delicious kebabs are coated with chilli sauce. Composition:
600g sirloin, cut into small pieces
3 tablespoons sweet soy sauce
30 bamboo strings
Spice paste (grind all ingredients together):
12 onions
8 cloves garlic
1 1/2 tbsp caraway seeds
2 tablespoons tamarind essence
1 1/2 teaspoon salt
100g palm sugar
Chili sauce (mix all ingredients into a smooth sauce):
5 Yanyan chilies, sliced
1 tomato, cut into pieces
2 onions
1 tablespoon vinegar
5 tablespoons sweet soy sauce
How to make:
Mix beef, sweet soy sauce and spice sauce in a bowl. Cover and refrigerate with plastic wrap and Jeep in the refrigerator for at least 2 hours, so that the taste can blend into the meat. Stir the marinated beef in, roast until cooked, and slightly char. During barbecue, marinate as needed and eat with chili sauce.
