Local soup: Nigerian delicacy

in food •  6 years ago

This is called bitter leave soup.. otherwise known as "atidod" in my local dialect (Akwa Ibom state). It's very delicious
You can either eat it with rice, garri (cassava grits) or semovita.. depending on your preference

INGREDIENTS
-bitter leave
-waterleave
-melon
-goat meat
-periwinkle
-palm oil
-dry fish(roasted/smoked)
-seasoning
-crayfish
-pepper
-onion

PROCEDURE
-wash the meat and put them in a pot
-add a lil portion of the grinded onion and pepper, plus seasoning
-place on the fire to steam... then add water when it's self generated water is almost dried up
-wash and shred the water leaf... wash the shredded leaf again to get rid of the slimmy liquid
-pour the water leave into the pot of meat
-wash the periwinkle and dry fish, then put inside
-pour in the grinded crayfish and seasoning too
-place it on the fire... add palm oil after 2min
-allow to steam for like 5min, then pour in the melon and stir
-allow to steam for another 5min, then finally pour in the washed bitter leave.. stir and serve hot
