As a Chinese living in London, I have tried Sweet and Sour Pork Loin in lots of Chinese restaurant. But they all don't taste authentic.
So here i want to share with all of you how to make an oriental authentic -- Sweet and Sour Pork Loin.
Ingredients:
Pork Loin, Sugar, Ketchup, Eggs, Ginger, Potato Flour, White Pepper Powder, and Sesame Seed (fried)
Cook Steps:
1: Take ginger juice
2: Take egg white
3: Slice pork tenderloin, and put it into a bowl
4: Add some salt
5: Add some white pepper powder
6: Add some egg white
7: Add ginger juice
8: Mix well and marinate for a while
9: Rolling over the marinated pork with the potato powder
10: Deep fry in oil pan until surface changes colour
11: Pull out and rest a while
12: Deep fry in oil pan again until the surface becomes yellow and crispy
13: Pull out and filter oil
14: Set aside another pot and put in some ketchup
15: Add some sugar
16: Add some water, and boil it
17: Add some water which mixed with potato powder
18: Boil until the soup becomes sticky
19: Pour in the fried pork quickly into the soup
20: Stir fry evenly
21: Add Sesame Seed
22: All done and enjoy!
Tips
1, fillet cut long strips, slightly coarse is fine
2, Be patient when rolling over the marinated pork with the potato flour, shake off the powder on the surface
3, Recommend to do step 11 and 12 instead of frying once , so that a layer of skin outside will be very crispy
4, Balance the ketchup and sugar according to your own favourite taste.
