第一次去澳门旅行,被朋友拉到维景酒店下面北京街的小巷子里,品尝了据说是澳门网红美食小吃,一种独特的酸辣粉,朋友说吃过一次你就忘不了。
很小的一家店面,没感觉有什么特别的地方,里面却是人满为患,墙面上写着各种食谱
好久都没有等到位子,我和朋友只好打包带回酒店品尝,吃了第一口我就深深的感叹,澳门居然还有什么美味的小吃,因为我是北方人,在我印象中粤菜是不太符合我的口味的。可是这份酸辣粉完全征服了我的味蕾。非常辣,但好吃到完全停不下来。以至于后来再去到澳门,进关第一件事就是直奔这家店,先吃一碗酸辣粉过过瘾再说。
很久没有去澳门了,时常想念这碗特殊的酸辣粉,偶然在家试着自己做一碗,没想到味道居然完全一样,终于可以吃到梦寐以求的这碗酸辣粉了。今天就把食材和烹饪方法分享给大家
食材:红薯粉、剁椒酱、鸡翅、白菜、木耳、葱、姜、蒜、八角、白芷、桂皮、甘草、黄酒、酱油、香醋、胡椒粉
1、红薯粉用凉水浸泡半个小时
2、用石臼将八角、白芷、桂皮、甘草捣成粉末,倒入剁成小块的鸡翅中
3、加入一勺胡椒粉、一勺黄酒、少许酱油腌制20分钟
4、姜切片、蒜切碎、白菜切成小片
5、锅中放油,放入姜片爆香后,加入剁椒酱炒出香味,将腌制好的鸡翅倒入锅中翻炒至肉质收缩,加入开水煮5分钟
6、水开后加入泡好的红薯粉和白菜、木耳,加入盐、白糖和鸡粉和一勺香醋调味后就可以出锅拉
非常的好吃,和我们常吃的川味酸辣粉不一样,但味道绝对有过之而无不及,动手能力强的朋友们可以在家试一试
