#FoodFightFriday Salmon in Wild Blackberries, Asparagus with Mushrooms

Over the weekend, I enjoyed a Steemit campout and picked loads of wild blackberries. https://steemit.com/socalsteemit/@creationofcare/berry-picking-with-steem-friends

These are obviously delicious raw with cream, and that's what became of most of my haul...but then, there's this thing called #FoodFightFriday which got me thinking...

How can I turn this wildcrafting abundance into a fabulous entree?

I delved into a childhood remembrance of my grandparents serving smoked salmon paired with cream cheese smothered in blackberry-chipotle jam. We spread it on crackers during their Happy Hour ritual that my friend Bobbie described as "white people fancy". Yes, blackberries on salmon, that's the ticket!

I perused the internet, and combined a bunch of recipes into the following concoction:

In a saucepan make blackberry wine sauce:

[ ] 1 cup blackberries

[ ] 2 Tbs red wine

[ ] 2 Tbs balsamic vinegar

[ ] 1 clove garlic

[ ] Pinch black pepper

Simmer med low

Cast iron pan (med high heat):

Toast Almonds dry

Fry salmon portions in butter and oil. Set aside.

[ ] Thaw salmon, season with salt pepper.

[ ] 1 Tbs each butter and olive oil

Saute asparagus and mushrooms.

[ ] Add 1lb mushrooms and 5 cloves garlic to the same cast iron skillet; cook, stirring often, about 8 minutes.

[ ] Add asparagus; cook, stirring often, until asparagus is tender-crisp, about 8 minutes.

[ ] Add chives. My family prefers their onion products cooked, so these went in a bit earlier, along with some cooked bacon I minced up.

[ ] Splash of balsamic vinegar

[ ] salt and pepper; toss to combine.

[ ] Sprinkle with almonds, garnish with basil.

I retrieved my beloved fish plate, which helped to inspire my kitchen remodel last year. What better backdrop for this fanciful dinner?

It's amazing the abundance that nature provides. I can't wait to return to Mountain Home for more wild blackberries. I am making Blackberry-Chipotle Jam for Christmas presents!

Oh yum. My mouth is watering at the sight of this. Salmon is my favourite but I'm oftwn at a loss for something which is light but flavourful enough to accompany it- I'm going to have to give this a try! I love tje idea of the blackberry accompaniment too. Oh goodnes... i need a bedtime snack now !

I originally thought that plate had a smeared blueberry on it or something ;p

I love all that saute'd goodness, asparagus is one of my favorites, next time I am going to add bacon to it too!

This food is remarkable in its own way. The salmon fish on the plate with some mushrooms and the rest. It carries very valuable nutrients to the body.
Oh the plate also looks beautiful with all the distinct food colour designs. I will soon be making a plate of this.

This plate almost makes my mouth water. Picking your own berries or veggies makes for such rich flavor; store bought can never compare. What a lucky family you have to have a chef like you. Great looking dinner @creationofcare !

Thank you! I must share the kudos with my husband and partner in the kitchen, @mattlovell. I used to only make things in my stockpot like stews and chili. Fff is really motivating me to seek out and try new combinations and techniques. Cheers!

That’s fantastic! Food fight Friday has inspired me to more thoroughly document my dinners (gotta love this community). The credit I give to my husband in the kitchen is that he always compliments my cooking while scarfing down his dinner; that in itself is all the help I need. Love your creations and look forward to seeing more of them.

Yet, another spot on mouthwatering dish with equally awesome presentation. I love blackberry jam and salmon, so major winner there.

Picking wild blackberries is kind of thing around here. They grow basically anywhere. We used to have an office building with a very large blackberry tangle in back. We had to ward off people from coming on our property when we were closed because they wanted to pick the berries. Weren't very successful at scaring people off, though, because there were always two or three others to take their place.

Well done again. It all looks amazing.

I can't say I have ever picked berries...we don't have them in Nigeria but we have lots of other fruits. It is always fun going into a forest or plantation with friends just to pluck fruits. We get to climb trees and take a lot of pictures! I know you had fun at your camp out.

M-m-m! this is making me hungry! that combination in the jam of Blackberry-Chipotle sounds really interesting. I never would have thought of combining the two. Love my berries and cream too but I may be able to spare some for these different recipes. Thanks for sharing!
