Cold Appetizers 2000 pcs

So we had to make 2000 of these appetizers in under 6 hours and we had to make 5 different types :
Chicken tortilla- Hard boiled chcicken breast then made a paste out of it, salt, peper, garlic and maio, mix that until it got a nice texture, like the mash potatoe texture, rolled it in tortilla,then sliced it into segments.

Tuna paste- Canned tuna , drained most of the oil but still kept a bit , grind it with salt,pepper,lemon juice, and some of the oil left. Then used a pipeing bag to give it a nice shape in the tart.

Vegetable tortilla- Green,red,yellow bell pepper peppers cutted juliene, fine chopped onion,sote them with butter, salt, pepper and at the end a little Aceto Balsamico.After they colled down , rub some butter on the tortilla ,put the vegetables,roll it the cut it in segments.

Olive tapenade- Black olives with no seeds, drained really really well, turned into paste , mixed with baked garlic,salt,pepper, oregano then pipped into the form or tart and for the décor` , sprinkle some white sasame seeds on top , also used sprouts for the extra color.

Vegetable quiche- Red,yellow and green pepper, diced very small, filled the tarts half with the veggies than in a bowl, beated 3 egg and mixed them with salt,peper and 2 full spons of cooking cream. Then gently pured the composition in the tarts until the tarts are almost full. Then baked in the oven for 8 min at 180 degrees.
