Filipino food Adobo, its taste and the story behind it

Filipino are very well known when it comes to cooking, the quality and the taste of the food is undeniably mouth watering. The Philippine cuisine had also been recognized around the world, through its delicious authentic food from each different cities and provinces, and the Adobo is one of that best tasting food.

The Adobo has been brought to us by the Spaniards, as they tried to colonized our country during a past few years way back, it comes from a Spanish word adobar, means 'marinade', 'seasoning'. It is one of the most popular main dish in our country. It can either be cook using a fish, pork or chicken meat. This way of cooking food, helps our ancestors to prolonged and preserve the meat, because of the vinegar, that serves as a healthy preservative and since the refrigerator isn't available at that time.

The way of cooking it is quite simple and easy, you just need to simmer the meat, until it becomes tender, add the sliced potato, onions, some black pepper, vinegar and soy sauce, then wait for a few minutes until it absorb the sauce from those ingredients. To make it tastier, you can separate the meat from the sauce, then fry the meat, just wait until your meat becomes juicy, then pour the sauce, then it is ready to serve. There are some people who add some boiled egg in this type of dish, to add more different flavor to it.

You can see this Adobo in a daily meal of any Filipino, even in a big or formal occasions, such as feast day, christening, birthday and any other gatherings, this suites the big appetite of our race and its sourness gives a kick of some appetizing taste. That's why we really loved the taste and the aroma of this Adobo.

I love chicken adobo, especially when my wife is the one that cooks it. It is my second favorite type of chicken (fried is my favorite). I don't care for any other type of adobo though, just the chicken. I think it is the most popular anyway.
