Have you tried this dish? This is called paksiw na isda in the Philippines. It is a way of cooking where you put vinegar in the fish to preserve it to make its spoiling time longer.

Some said that it is the technique used by our ancestors to preserve their food and is passed to generations. Inun.unan is best for fished specially those who can be seen on stones near the shore.
