Ube Pie

I had some ube on hand and decided to try it in a pie. Baked the ube and put through a fine chinois to get a smooth mash. Cooled and mixed with eggs, condensed milk, brown sugar, salt, nutmeg, ginger, cinnamon and allspice.

The initial bluish purple color turned darker after baking.
