I enjoy eating and often find myself hungry at weird hours of the day (and night), when I want to eat something fast that satisfies my appetite without feeling the guilt afterward. That's how I came up with this quick, five minute recipe that I call "Nina's Five Minute Nachos."

My nachos are made entirely of fresh vegetables and store bought items from ALDI: GMO-free, totally vegetarian, and inexpensive. You can buy your ingredients wherever you want; my son and I happen to like Aldi's varieties of hummus best. He likes the "pine nut" variety and I like the "significantly spicy" version. Note: Sabra is another terrific, healthy brand of hummus you can find at almost any grocery store.

Here's what you'll need to prepare the nachos:
a jar of salsa, hummus, fresh avocados and tortilla chips (optional).

Slice the avocado in half with a sharp knife and remove the pit. To do it easily, I hit the sharp knife onto the pit -- hard -- one time and then twist. The pit pops right out.🥑🔪 Years of experience. 😉 That is the hardest part about making the nachos!!! So far, so good? Hope so!

Next, slice the avocado. Line the perimeter of a bowl with torilla chips, or leave them out; your choice. I have photos both with and without tortilla chips. Add the avocado, scoop out some hummus, then top with salsa. Bam!!! 🥑🍅🥑

The best part is you can personalize your nachos with whatever ingredients you have at home. I like to add black beans and fresh chopped onions, especially sweet Vidalia onions when they are in season. Enjoy!!! 🥑🍅🍽🍅🥑

You are getting so many vitamins, nutrients, fiber and healthy fats in this low calorie meal, too! There are only 10 calories in a 2 tablespoon serving of salsa and 60 calories per 2 tablespoon serving of hummus.
