Cochinita Pibil is an original dish from the Yucatan Peninsula. This Cochinita I make is an adaptation of the original version, but better hahhaha! I marinate big chunks of Pork leg for 24 hours and then slow cook them for another 8 hours. Then it is time to shred the meat with forks and knifes. This meat is juicy and spicy enough to just put it between two breads.
