Foodie! Lechon Kawali

Hello Everyone!
Today I'm going to share with you guys a recipe of Lechon Kawali that I cooked last New Year's Eve. Lechon Kawali or Pan-Roasted Pork is one of our most popular Filipino dish. It can be served as appetizer or Main Dish. Lechon Kawali is an easier version of Lechon or the Roasted whole pork skewered with a whole bamboo stick and roasted in a pit of charcoal for several hours. The word Lechon is a spanish word that means roasted suckling pig. Lechon kawali is a bit different to lechon but still they are both known for its crispiness and best paired with lechon sauce or spicy vinegar. With this easy steps you can have your own mouth watering lechon kawali, so what are you waiting for? Let's start cooking!

First lets prepare for the
Ingredients:

1kilo pork belly (whole)
2tbs salt
1tbs peppercorn
2-3 bayleaves
2tbs fish sauce (optional)
3tbs vinegar (optional)
water
cooking oil for frying

Instructions:

  1. Put water in a caserole or a pressure cooker if its available. Bring to a boil. Add the salt, peppercorn and bayleaves. You can also try adding fish sauce and vinegar. Cover the caserole/pressure cooker. Let it simmer for 30-40mins to make sure the tenderness of the pork.
  2. After 30-40mins turn off the heat. If you're using a pressure cooker make sure to release the air pressure before opening. Remove the pork from the caserole/pressure cooker and drain the pork. Wait until its cold enough so you can hold it. Put a little bit of salt to the pork belly before frying.
  3. Heat the oil in a pan or you can also use a caserole for better deep frying. When the oil is already hot. Make sure that the oil is enough to cover the pork belly. Put the pork belly with skin facing down carefully and fry until its golden brown and skin is crisp and puffed.
  4. Remove the pork belly and drain the excess oil then cut into serving pieces. Best if served with lechon sauce, here in the Philippines we used to serve it with Mang Tomas and of course don't forget the steamed rice because Rice/Kanin is life. LOL And Tadaaa PERFECT! Enjoy your Lechon Kawali!
