Here is my version of Pancit Palabok or Pancit luglug. Pancit palabok is a noodle dish top with cooked shrimp, sauted ground pork, boiled egg, crushed chicaron and spring onions or whatever you want to topped with will do.
You can put tinapa flakes. Tinapa or smoked fish is perfect in palabok (malinamnam/malasa) but i don't have tinapa. Next time i will put tinapa.
INGREDIENTS:
1 pack Bihon noodles (rice sticks)
1/2 Kg. ground pork
5 cloves garlic
1 onion chopped
Fish sauce
3 tbsp cooking oil
Fish sauce
For the Sauce:
1/2 cup cornstarch
1 piece shrimp cube
5tbsp anatto powder (atsuete)
Salt and Pepper
4 cups of water
For the Toppings:
Sauted ground pork
Cooked shrimps
Hard boiled eggs
pork chicharon (crushed)
spring onions
lemon or calamansi
FOR THE PALABOK SAUCE:
In a saucepan, combined and dissolve cornstarch, water, annato powder (atsuette) dissolve in water, shrimp cubes, salt and pepper to taste. Let boil, but make sure you continue to stir the sauce. Cook until sauce becomes thick. Set aside.
For the Toppings:
Heat cooking oil in a saucepan and sauté garlic and onion, add shrimp.
Add the ground pork and cooked in a medium heat for 10-15 minutes or until the pork turns brown.
Add a piece of shrimp cube and fish sauce and set aside.
How to cook the Noodles (Bihon)
Soak the rice noodles for about 5mins to make it tender.
In a strainer soak noodles in boiling water for about 2 minutes or until the noodles are cooked.
Drain the noodles and transfer to a serving plate.
Put the palabok sauce and top with the toppings.
Squeeze some lemon or calamansi.
